I have two celebration squash and a butternut. Anyone with any bright ideas what to do with them (together or separately ) that isn't soup? Help!

Am open to all manner of pies, curries, stews etc. No allergies. Just needs to feed two adults and three kids.

TIA.

Olla Gitana (gypsy stew) In a little oil cook finely chopped onion and garlic, when done add chopped ripe tomato (can be from a jar) after cooking for a few minutes add spanish paprika and cumin stirring so paprika doesn't burn, add chopped green beans, chopped butternut or squash, salt and pepper and a bay leaf if liked.
Add chicken or ham broth (can be water and stock cube) Bring to the boil, add cooked chickpeas (or half chickpeas half cooked beans). Lower heat to simmer. Peel a pear or two and add chopped to the stew. If you don't want to add pear add chopped potato when you add the other vegetables.
Cook on medium heat until everything is cooked. If you want to thicken stew
fry a clove of garlic, a small pice of bread, a little bit of turmeric and a bit of parsley. Blend to a paste with a little of the stock from the stew. Add and boil for a few minutes. Last step is totally optional.
It's a thick, hearty meal in one pot

Oooh, good ideas. I don't know why I have such a blind spot with squash. Thanks.

Riverford has a great squash and chickpea recipe that uses lemon grass. The dcs, who usually complain of having curry, ate it without a complaint and dd even asked to chew the lemon grass stalk at the end of the meal. I omitted the chillies for the dcs.

Oooh, my kids would definitely eat that. They are unhealthily obsessed with anything with coconut milk in it!

Tonight for dinner we had pumpkin and dhal soup. It's basically squash soup with Indian spices, cumin, coriander, turmeric and a little chilli with a cup of red lentils added to the mix. Cook till the lentils are soft (20 minutes or so) whizz with a hand blender and serve with a drizzle of lemon juice or a blob of natural yoghurt.
