Defrosting fish please help!

I'm due to make a fish pie for lunch but forgot to defrost the fish pie mix overnight...

It's out of the freezer now, but will only have an hour to defrost before I start to make the pie. It'll bake for 30 mins in the oven. The fish box says defrost for 8 hours. As it won't have had that long to defrost am I risking food poisoning or is it just that the fish will taste a bit rubbish?

I think food poisoning only if left out too long for defrost. Or, if not unfrozen enough and hence not baked thoroughly. Baked long and risk rubbish? I have placed mostly frozen chicken in water tight plastic bag and submerged it in warm water to thaw quickly. What I read about that is - you have to keep replacing the warm water so that it defrosts in under 15 minutes - otherwise, maybe food poisoning.
