Round red squash, what to do with it?

medium size round red squash in my veg box.

what can I do with it apart from usual soup?

I don't know if it would work with your particular squash (not having seen it!) but my two favourite recipes with squash are:
squash risotto with goats cheese
and squash "kiev"

Risotto - I peel and cube the squash, drizzle with olive oil and roast in the oven. While it's roasting I make a basic white risotto; arborio rice, finely diced onion and garlic, stock and/or white wine, splash of cream if I have it, parmesan. When the squash is golden and browning at the edges and the risotto is ready I stir in the chunks of roasted squash and crumble in goats cheese, stir through, and serve with more parmesan. Yum!

Squash kiev - super easy but only works with a smallish squash. Halve the squash, scoop out the seeds, leaving a cavity. Fill (or part-fill) the cavity with garlic butter. Brush exposed flesh with olive oil or more butter. Roast in a medium oven until flesh is tender. Eat as a light supper or filling side-dish.

Depends for how many, if for 2, cut in half, drizzle with olive oil and roast til tender, fill with savoury rice or cous cous and chopped peppers and onions?? perhaps?

Squash kiev sounds great. I'll try that if I get a squash next week. I've been doing a recipe that came with my veg box - after a few weeks of using them as art decided to try cooking with them. Slice off top, scoop out seeds and stringy bits then fill with red onion cooked with garlic, breadcrumbs and cheese (I used cheddar and parmesan) then pop lid back on and bake for about an hour. V easy.
