Interesting butternut squash recipes?

Interesting and delicious.

I have some of the presliced in the fridge and I need to use it up. Any good ideas?

I usually add it in soups or occasionally eat it roasted but I'd like to do something different.

We eat a mostly pescatarian diet so would prefer vegetarian or fish recipes only but am happy to stick quorn or tofu in place of chicken in meat recipes.

We do roasted squash, red onion (and any other veg that needs using), feta cheese and a bit of chilli. Rosemary if you have it though I didn't use it the last few times and mix it all with tagliatelle.

I like putting it in little pies; pre-rolled pastry, and pies or pastries made of roast butternut squash, red onion and goats cheese. Also it goes fantastically with ginger and chilli.

I made a butternut squash risotto the other night and it was lovely.
The recipe was on itv.com/thismorning, search for pumpkin risotto (sorry, I can't add a link for some reason). I made a few tweaks but it was lovely.

I actually have some bulgar wheat and I have been wondering what to do with it.

I don't want to sound really stupid, but are butternut squash and pumpkin the same thing?

I've just eaten my chunky butternut mulligatawny which is sublime. Google BBC Good Food for the recipe. Very filling, too.

Roast bns and sage risotto.
Make a plain risotto as normal. Toss bns with olive oil, salt, pepper and sage and roast until soft and slightly caramelised. Stir bns through risotto just before serving. Then a good grating of Parmesan.

Pumpkin and butternut are not the same thing to the poster above, but you can use butternut where pumpkin is called for usually.

Oh yum! I can't wait to try some of these. Dh and I had Jamie Oliver's Hamilton Squash the other night and it was delicious - basically a butternut squash variation on a stuffed marrow.

Nigel slater does a recipe where he roasts it and then pours over a mixture of lime juice, ginger, fish sauce and some other stuff towards the end of the cooking time. It's really different and tasty. We have it as a side with ribs.

My favourite recipe is one I made up! Roast it until it is golden brown and then chop small. Cook pasta, pan add lashings of butter, goats cheese, thyme, pine nuts, squash and season.

Really simple and lovely.

If you don't want to use it immediately, cube it and shove it in the freezer. Its freezes really well.

We always have some in the freezer because one of our favourite meals is moroccan chicken (chopped chicken, carrots, onions, peppers, butternut squash, chickpeas - all covered in tagine paste, spread out on a roasting tray and bunged in the oven to roast together and then served with cous cous). It only takes half a butternut squash for the four of us and so the other half gets chopped and put in the freezer for next time.

Roast it with olive oil and then mash and add to a plain risotto with some chopped sage! (Also nice if you add a handful of cooked chicken)
