I can't cope with making lunches!

Does anyone have any ideas for adult packed lunches that I can make on Sunday night (with very little effort) and will be fine to eat on Tues and Weds? Healthier the better!

Alternatively does anyone know a shop bought lunch which can be bought on the weekend and will be fine on Wednesday.

So far all I can think of is shop bought soup and a breadroll from the freezer.

Am I missing anything?

Rice or pasta salad, tuna and bean salad, cous cous. Do you have access to a microwave? Jacket potato, soup, leftovers.

If you like tuna the tuna salad pot things are ok, John west I think or lidl do a version. The pasta one's are nicer than the rice, I usually have one with some crackers if I'm out of time/ideas.

Chop onion, pepper and add grated cheese/pesto/whatever.
Get a packet of wraps. Put a large spoonful of the chopped and grated mix in the middle and fold into a square. Wrap in foil. Keep in fridge. Take one/two out each morning.

I make a batch of soup over the weekend (in my soupmaker thing or slow cooker so minimal effort, just some chopping) and freeze in portion sized pots. Also freeze some rolls. Bob's your uncle.

Otherwise we make too much supper on purpose (even if its just pasta pesto) and have leftovers with bread/salad.

My mate makes all her kids sandwiches for the week and freezes them and just takes them out each morning. Defrost themselves by lunch. you could embellish with some cherry tomatos and a leaf or two.

Or, more lazily, I go to a fab International shop in town and they do Japanee and Chinese slightly healthier than Pot Noodle instant ramen/glassnudle/miso soup pots. I like those too. Quite good if you have access to a kettle at work.

I have a supply of healthy tinned soups and ryvitas in my drawer With a tub of margarine and individual portions of low fat cheese in the fridge at work. I take in fresh fruit daily. I also have packets of flavoured noodles and cous cous which only need hot water to rehydrate if I fancy a change. Now and again I prepare a sandwich or salad or take in last nights left overs.

You could make up a couple of 'snack boxes' in advance? Take a plastic tub with crackers or ryveta to work. Then on Sunday night box up one or two indivually wrapped cheese portions, baby toms, carrot sticks, pepper slices and one of those mini humous pots. That plus a banana or other fruit should be good? Or you could put in a yog if you wanted.

Pinterest is an incredible source of ideas for things like this. The mind boggles at the lengths some people (cough cough Americans cough) go to for packed lunches.

I've had success with tortellini (from fresh pasta aisle) by putting into boiled water and giving a couple of mins in microwave.

(Do you have a microwave and/or toaster at work OP?)

Or I quite like things like 'mama Thai red curry rice with shrimp' available from tesco online. I need a banana and a yog or something with it though as it's just 320 calories or something on its own.

If I have this for dinner, I always do an extra portion (in lots of sauce as seems to need it on reheating) to microwave at work. Then it just takes a min or so in the microwave.

For hassle free lunches I really think the key is to make too much dinner and just nuke up leftovers for lunch.
