It looks like it needs a sauce, a Vegan cheese sauce perhaps or a sumac based sauce.

I would ditch the clocked tomatoes and do a nice roast baby tom sauce, and then have something green like griddled baby caugette.

A potato dish, or cous cous?

I think it needs something 'carby' in there. I wouldn't find that very filling otherwise TBH. Maybe something simple like new potatoes in an olive oil dressing?

I would do a simple tofu curry with veggies, then add some turmeric and garlic to the cauliflower

Yum!

they all seem like side dishes

some sort of risotto? butternut squash?
mushroom ravioli, or lasagne

roast cauliflower is great with indian spices, so how about a dhal/curry and lots of lovely naan breads?

aubergine parmigiana is nice if you want to use up those tomatoes, not too sure about any recommendations for vegan cheese though

Thanks all - stupidly got home and can't get back out to the shops, so will have to fashion something out of what I have in (not much!!)

Roasted some chickpeas to add to wheatberries. I have some cannellini beans, maybe I can do something with them?

For future I like the idea of Indian spices but I currently have ceramic braces and a wedding in a week so avoiding anything that stains!!

Sticking with the fresh toms though cost we live in California and they're currently in season and amazing
