portable porridge..??

so in a few months I go back to work full time leaving DP to get DS1 and 2 dressed, fed and off to nursery. They'll be 3.4yo and 1yo. At the moment they both eat their own body weight in porridge for breakfast and I'd like for them to continue getting a good breakfast even during the rushed solo-parenting mornings.

Does anyone have any recipes for oats on the go..? Am thinking healthy flapjacks, oaty muffins or pancakes, that I can batch good in the freezer and take out the evening before and so breakfast will just be ready for the next day.

just to add that its not so much that porridge takes a long time to make, its just that DS2 especially gets COVERED in the stuff so the aim is to keep mess and clean up to a minimum in the mornings....!

If you soak oats overnight in milk and water you just need to warm them up in the morning to get super quick porridge.

The problem with flapjacks, oat biscuits etc is that you need pads of butter and syrup to hold them together. Muffins might be better, although I can't recommend a recipe.

No recipes that wouldn't make a mess I'm afraid. How about one of those aprons that covers their clothes, then you just have to wipe face hands and hair?

Could they have brekkie when they get to nursery? We don't do it often but as our nursery is open from 7.30 they are fully geared up to give breakfast.

If there has been a lack of parental communication (I pack his lunch box then leave while DH gets DS up) it's not unknown for DS to have 2 breakfasts!

We love oaty banana pancakes. I'm sure they'd freeze. Defrost overnight the pop in a dry pan to reheat - would take seconds and very limited mess. You could make as many as you want for the freezer, to these proportions: one medium banana to one egg to about 2 dessertspoons of oats, plus a pinch of baking powder. We sometimes add cinnamon or even a dollop of nut butter. Fry dessertspoon size pancakes in oil; I like to use rapeseed but whatever you've got.

My quite fussy, not brilliant eating 18mo can manage about six on a hungry day!

Oh I forgot - mash banana well, beat in egg, add oats, add any other flavours, cook!
