Ideas for easy homemade salads for lunch

I'm lucky to be able to come home from work for lunch. I'm trying to cut down on carbs. I often make a huge Greek salad to last me a few days (feta, tomato, cucumber olives, chickpeas, red onion etc) and I have a bowl of that with fresh leaves, hummus and maybe coleslaw for lunch.

I'm looking for something different but similar, something I can make in a big bowl and have in the fridge to grab at lunchtimes. Any ideas?

Slice a roll of firm goats' cheese and toast in a frying pan (dry) with a handful of pine nuts for a few minutes. Glorious on top of a big pile of leaves and a blob of mango chutney on the side. No dressing needed.

Fresh figs quartered, mozzarella balls, Parma ham on a bed of rocket.

Drizzle over lemon juice, olive oil and some cracked black pepper.

Beetroot, cucumber, red onion, lemon juice and flat leaf parsley. Add feta and fresh green leaves to taste. I've only ever eaten it fresh though, rather than dipping in over several days.

Taboulleh ought to be okay in the fridge for a few days.

I love tuna and boiled egg with the usual salad veg. Have it with avocado but best to leave that whole and cut it when I'm ready to eat.

I also love couscous with stir fried Mediterranean veg and grilled halloumi (but presumably you wouldn't want much cous cous)
