Freezers

Hi,

For the first time ever I have a decent sized freezer. Actually it's massive. I'm good with store cupboard essentials, but wondering what your freezer essentials are so I can have a good stash of useful things. I've tended to use the freezer for leftovers rather than ingredients. We're currently a family of three (me, DH and 2.5 yr old DS) and soon to be a family of 5, although obviously babies won't need to be catered for at first. Under normal circumstances we always seem to be short of time, although I am a reasonable cook.

I always have in freezer:
Sliced loaf
Bagels/rolls/baps
Ice cream
Bacon - rashers and lardons
Pesto frozen in ice cube trays
Parmesan - whole or grated
Chopped chillies to add heat
Diced bits of leftover chicken to add to risotto
Pack of sausages
Sliced lemons to add to drinks
Puff and shortcrust pastry sheets
Bags of fresh breadcrumbs
Bags of crumble mix
Parboiled potatoes (roast from frozen)
Bags of grated cheddar for toppings/pizza
Margarita pizza

And loads of batch-cooked meals, both in individual portions and in dishes to feed 4 that go straight on the oven

(Nb I am a SAHM and as such obviously have nothing else to do Wink)

Wow I'd never have thought some of those could go in the freezer and still be good to use. There needs to be a book/blog shouting what can/can't go in the freezer, how you prep it before, how you use after (cook from frozen, defrost first, microwave it etc).

Mine mostly has left overs or things I've batch cooked but also:
Fresh ginger cut into useful sizes
Chillies
Ice cube trays of ginger, chilli, garlic and sometimes lemon grass to chuck straight into curries/stir fries.
Small amounts of leftover wine for cooking with.
Frozen mash and par boiled potatoes for doing roasties.
Fresh breadcrumbs mixed with chopped herbs to make stuffing
Part cooked pizza bases
Chicken or turkey stock in small portions
Fresh stuffed pasta, ready made quiche for quick meals
Fish fingers and very small amounts of frozen mash or small amounts of frozen spag bol for if we are eating out but DD will need tea.
DH also buys large hams when they are reduced, cuts them into useful portions and freezes then he cooks them on a Sunday and uses the meat for his sandwiches all week.

Ooh and in a few weeks time blackberries in portions ready for crumbles!

I have a big freezer on the garage and it contains:
Lots of batch cooked meals in individual portions
Tortilla wraps
Bread loaf
Rolls
Chopped onions, lots
Various other frozen veg
Frozen herbs
Milk
Ice cream
Ice
Quiche for picnics
Meat

Have fun filling it Grin

I freeze white wine if I've had people round and they've been drinking it - I can't stand the stuff but it's fine to add to stews/casseroles etc straight from the freezer

I always have frozen peas/sweet corn, maybe broccoli too.
Diced onion freezes quite well so if I have onions almost at chucking out point, I dice and put in freezer bags.
Mash also freezes well and the ready frozen stuff tastes nice and comes in handy.

I also keep wraps, crumpets, sliced bread in, as well as batch cooked meals.

There are always salmon steaks and chicken breasts too, the salmon I buy individually wrapped and freeze it

Gravy
Milk
Prawns
Chips for err.. "emergencies" and post-pub sarnies when you can't be arsed to peel spuds
