I would suggest things with mince/Quorn mince eg. Spag Bol, shepherd's pie, chilli.
Frittata is very easy and you can put just about any veg in it then serve in wedges with salad.
If you learn to make a decent curry sauce you can put pretty much any meat or veg in that too.
Pinterest is a fabulous place to look for recipes.

Meat ragu that can be used with spaghetti or in a pasta bake or lasagna.
Risotto, very good for using up left overs.
Roast chicken, serve with mash and veg, or as a roast dinner.
Sausage casserole.
Chicken casserole, ring the changes with different vegetables and flavourings.
Salmon baked a in foil parcel.
Stir fry, with vegetables noodles and chicken.

Tray bakes are very easy. Just pop some chicken or sausages and a selection of veg on a baking tray with the herbs and spices of your choice. You can put whole garlic bulbs in for a delicious soft creamy garlic accompaniment. I like to serve them with an Indian style raita (yoghurt with finely chopped cucumber, mint, coriander and a pinch of chaat masala).

Chilli - fry chopped chilli, onion, mince and garlic, chuck in chopped tomatoes and beef stock, put in your seasoning including salt, paprika, cayenne pepper, chilli powder, cumin. Add kidney beans and simmer for a while. You can add bell peppers and other veggies to bulk it up and get those 5 a day in. Serve with rice.

If I'm feeling lazy about seasoning, I like getting those maggie bags and things like that. You just put all your ingredients in a bag and put in the oven for a while. There's all different ones so they're quick and easy meals that you can vary

Lasagne
Chilli
Cottage Pie
Roast Chicken
Homemade pizza (serve with wedges & salad)
Curry of any variety!
Lamb tagine
Sweet & sour chicken

I'm a pretty amateur cook but I manage all of the above quite well I think!

Go and get yourself Jamie's Ministry of Food cookbook. It is geared to set out the basics of meals, and gives some useful variations on each theme.

I'd def go for things that can be easily adapted into other meals.

Also try and cover off learning to cook rice, pasta and potatoes and several different kinds of veg.

Regarding rice, its really versatile. I usually boil my rice in stock. Any stock you fancy. You can add any herbs and spices you like. I also put peas and other veg in mine. Again, bulking with veg Grin

If you can make different types of pastry that will extend your choice of dishes. Also have a look at BBC Food with masses of recipes, and you can search for meals with the ingredients you have to hand.
