Best simple but delicious veggie recipes?

I have a friend coming to stay for a week, she's not veggie but I am so she will be eating veggie whilst here and I want to show her veggie food can be delicious.

However my repetoire of veggie meals is probably quite repetitive (Italian style tomato-based sauces feature a lot!) plus I eat quite a lot of pasta whivh she isn't keen on. I'm struggling to think of 7 tasty meals that won't seem too samey but also won't take an age to prepare and cook.

I need some inspiration so can anybody share their favourite veggie meals, ideally something pasta free and which won't require me to spend hours in the kitchen.

Nigellas chickpea curry is really tasty and also spinach and lentil Dahl too.
Stuffed aubergines
Tofu and black bean sauce ( Gok wan I think )

There is a recepie on bbc good food for paneer, cauliflower and pea curry which is AMAZING
Veggie paella
Cauliflower cheese is a fav
If not pasta how about gnocci?
Stuffed mushrooms
Imam byaldi
A nice hallumi and falafel salad
Homemade pizza
Stir frys
Quesedilas
Fajitas
Lentil shepherds pie
Potato skins with cheese and spring onion
Bean burgers

Loads!

I always post this amazing Caribbean stew it's tasty, quirky and goes well with a slice of crusty sourdough or, if you can be bothered, cornmeal dumplings. Don't be put off by the slightly strange combinations, it honestly works! I use canned kidney beans though!

Dhal (search under my name if you want my recipe)
I serve it with 'pealau' rice (basmati rice and spices, to which I add some frozen peas)
Chapatis (bought)
MInty yoghurt
Onion and cucumber salad

Quiche with roasted garlic new potatoes and salad

Veggie fajitas or burritos

Black pepper tofu (this is sooooo good)

Veggie chilli with all the trimmings

I am about to go and make my take on Malay rice.

Boil some rice and chuck some beans and peas in with it while it boils. In a saute pan fry some quorn chunks, mushrooms, onion, garlic and cashew nuts.
Mix in the rice and peas, add a couple of spoons of curry powder a little paprika and some soy sauce. If you want to you can also pre boil a couple of eggs to chop up and stir in.

S - roast dinner - cook more veg than you need and...
M - curry using leftover veg
T - veg mince or just veg spag bol
W - salad and felafel/halloumi
T - Chilli and rice
F - left over chilli with wedges
S - salad for lunch and veggie noodles for tea

Hugh F-W North african stew, it's in his Veg book.

Jamie has a lovely spinach and feta filo pie in 30 minute meals, might be on his website. He also has a few veggie curries.

There is a delicious red lentil and cauliflower curry recipe in Sainsbury's one pot cookbook. Always goes down well with the whole family. We are trying to eat more veggie meals, trying to do 2 or more a week. Risotto's are good and not too tomatoe-y. The same book has a broad bean risotto which is also yummy and cooks in the oven so nice and easy. My fave really quick veggie meal is courgette pasta, but that's pasta so not v helpful!

Shaved asparagus pizza with a pea pesto base.

Stilton and broccoli pizza

Falafel, Roasted root veg, cous cous, hummus, pitta.

Giant yorkshire pudding topped with rocket, battered broccoli and horseradish mayo

Curried chickpeas and spinach on baked butternut squash.

Aubergine lasagne is so nice and so simple. I found the recipe on youtube waitrose channel.
