Desserts on a stick?

Ok, so we and another family are doing a "Come Dine With Me" thing in August for a laugh. Both families of 4, so one adult with one DC to each team. I've been lumbered with dessert! Now, everyone in the group will expect me to do something "off the wall". I've come up with the idea of doing a trio "lollipop" desert. Chocolate brownies is one, and I'm toying with the idea of a cheesecake one. Any ideas? Eggless would be an advantage as I'd really like to eat it with them!

Any ideas on how I could execute the cheesecake idea? I've seen a recipe which uses just the filling, but I'd really like to incorporate the texture of the cookie base in there too.

Cake pops, surely!!

Couldn't you put the biscuit in the middle held on by the cheesey bit?

Proper cake pops are nice, made from cake crumbs and preferably flavoured buttercream or ganache and dipped in chocolate (not those ones made in a cake pop machine)

Pie? Any kind really.

Profiteroles...that's mostly just shoving a stick in, lol.

Trifle...cake pops with a bit of custard in the middle and jelly on the outside.

Something with meringue round the outside, Eton mess or pavlova...ok, I'm maybe getting carried away now and it's definitely not egg free, but it could work.

I'm liking the trifle idea...how would I put jelly around the outside? I could happily forgo dessert

Just put the cakey bit in unset jelly, it'd set round it...well it would soak in a bit too, but that's why I like trifle, lol

On a side note...it has to be spelt "orrypops" as DS (3) only just started pronouncing it properly, and it's stuck! Grin
