A new ingredient or a new technique?

I just made a roast chilli and lentil soup and it was wonderful. I've roasted chillies before so I guess it doesn't count as a new technique but I haven't put them in soup!

Not a new ingredient or technique, but I made the Hemsley and Hemsley Paradise Bars. They are delicious and almost guilt free! Grin

flatbreads cooked in a frying pan with the lid on - made them much softer and puffed up better. Also discovered that if I roll some cold grated butter in the dough it is slightly like a paratha

coffeebean great tip I make flatbreads a lot. I often fill them with cooked leeks and halloumi or figs and feta or various other things. Fold over and then toast. I'll def try your technique.

I bought sweet smoked paprika for the first time and used in in a casserole with tomatoes and chicken thighs plus a few other herbs and spices. Extra tasty

Almond butter

Just a load of raw almonds whizzed up in the food processor until they release their oils (about 15 minutes, keep stopping to scrape down the sides). Absolutely delicious, new addiction :)

Roasted asparagus last night. Thumbs up!

Seafood risotto, with one of those supermarket packs of mussels, squid and prawns. Only 2 of us in the family will eat it so I'm not likely to get it all fresh and whole from the fishmonger. Was good, but not as lush and decadent as our local Italian restaurant where it is what I usually order.

Soft gingerbread made with the help of ds.

Coconut flapjacks ditto - really nice. Recipe from Quaker Porridge Oats site.

Mintyy do you put shit loads of butter in? I think that's the restaursnt secret, beating in a heart attack's worth of butter at the end.

I made a mushroom and bacon risotto from the What Katie Ate book last week and it was to die for.

I try to make something for the first time at least once or twice a week - I get in such a bored rut otherwise. I would love to try more baking ideas, I could do it all day every day, but I daren't because then I'd just have to sit and eat it all.

Last night we tried salmon fillets coated in garlic and herb Philadelphia with some chopped spring onions and chives mixed in, panko breadcrumbs and parmesan on top, and shoved in a hot oven for 20 mins. It usually use pesto with breadcrumbs and parmesan but this was lovely too and nice for a change.

Have recently started making sweet potato chips in the Actifry - they are going down well.

Homemade peanut butter and soca (gram flour pancake), inspired by A Girl Caled Kack. Lovely.

Tana Ramsey recipe for orbit butter cookies - just doesn't work, I have tried it before and didn't work then either.

very low calorie onion soup. 2 chopped onions - one red and one mormal, microwaved in a little water until soft, add an oxo and some boiling water and then blitz with a hand blender. Turns out like a rich french onion soup but but without the butter calories.... very quick and great for a fast day on 5:2

I've been experimenting with dips. I made a broad bean and bay leaf hummus, baba ganoush with lemon and chilli, and a spring onion and avocado salad with white pepper. My recipe boxes are at that in between stage where you get lots of odd mixtures. This week I will be trying to use up 5 beetroots and Kale tops.

I've also recently perfected a lettuce risotto. It is a beautiful light dish that is perfect served hot or cold. It looks so vibrant and its delicate flavours support the addition of lightly steamed fresh baby vegetables well.

Dips sound amazing what were they like?

Yes to socca! I make for the DC all the time either like wraps or with some grated courgette in like pancakes or like sort of pizzas with tomatoes and kushrooms on top.

Am going to try that onion soup when I'm at work with nothing but a microwave!

I've made bagels and pitta breads. Cheated and used the bread maker to make the dough. Both turned out really well. Also tried No Knead Bread and was super pleased with results. I'm all about lazy baking Grin
