Veggies/vegans meal plans for the week?

Keep getting lazy and slipping into pasta/curry/risotto stuff. Which is great but boring!

Ideas/recepies/meal plans welcome! smile

Lentil and dried apricot tagine with giant couscous
Roasted red pepper and tomato soup and garlic bread
Baked paprika and cumin sweet potatoes wedges with pineapple/mango and cucumber salsa
Glamorgan sausages with mash and tomato sauce
Five bean chilli (Or I sometimes use waitrose's 10 bean mix though it needs soaking) and rice

Haven't done a meal plan this week, as we're on half term and eating out/being lazy etc.

Here are some of the meals we've been eating a lot lately:

Black bean soup with nachos, tomato salsa and guacamole

Veggie chilli with rice and mango salsa or guacamole

Caramelised onion quiche with jacket potatoes and salad

Wedges (homemade), Quorn pies (bought) and homemade mushy peas (these are bloomin' brilliant!)

Paneer and vege curry with 'pealau' rice (ie with added spice and frozen peas!)

Spiced lentil soup

Thai vege curry with roasted tofu

Egg and chips!

some of this week is a bit lazy:

vegan burgers (H/M but out of freezer) with broccoli and carrots
japanese sticky rice with veg
roasted fennel, cauliflower and artichoke in herb sauce with farfalle
red pepper, red lentil and tomato soup
black bean and sweet potato enchiladas
lentil and chickpea curry
gigantes plaki with houmous and pita bread

guineapig1 love the sound of your Lentil and dried apricot tagine with giant couscous do you have a recipe for that please? I have all the ingredients and need inspired for dinner for the weekend smile
