What can I do with large quantities of leftover vegetable chilli?

Besides freeze it?

It is mainly veg chilli with some beans. I suppose I could make it into pie but the DCs aren't keen on anything topped with mashed potato so that would effectively limit it to me and DH eating it.

Any ideas? TIA.

pancake cake: make s tack of pancakes, layer with chilli and grated cheese, heat through in the oven (covered in foil) until the cheese melts and sticks it all together. Serve cut into big wedges with a side salad or veg.

burritos?

Fry off some onions with turmeric, cumin and coriander and add to the chilli to make a curry?

Grin these are all great, thanks. I'm tempted by the enchilada/burritos ideas - DCs will eat practically anything if it's wrapped in a tortilla or pancake with cheese on top!

Tortilla pie - stack the chilli in between layers of tortillas (like a lasagne) top with cheese/sour cream and bake in oven.

Quesidillas - put chill on half of tortilla with cheese fold over and "fry" in very hot frying pan then flip and "fry/toast" and serve - basically a tortilla toasted sandwich.

Huevos Rancheros - heat in up in a pan and serve with sour cream/ salsa etc with a poached or fried egg on top

Eat it with spagetti or pasta?
Top with sliced potatoe instead of mash? I usually add a bit of gravy mix to turn chilli into pie. DH copes chilli every week but not very spicy.
Tacos?
In pitta bread with cheese and advocado?

Nachos: pile on top of a plate of them, grate cheese on top, melt, serve with sour cream/salsa/guacamole and jalapeños.

Wow, loads more ideas this morning, thank you all! We made enchiladas last night and they were delicious, DH is a committed carnivore but he loved these and even commented that he preferred the no-meat version.

And now I have only half a giant Tupperware box left to use. I think I'll be making another one of these ideas tonight Grin

HF-W has a refried beans recipe, which he suggests is served with flatbreads, topped with avocado, red onions, cheese, lettuce, etc. This would also work with your chili, I should imagine.

We also often have it with (shop bought) taco shells, rather than flat breads.

This is always a really popular meal at ours.
