honey roasted carrots

how do i make these - fed up wth carrots on their own? thanks

I've never done them but do do honey roast parsnips. Peel, slice and par boil. Drain, place in oven proof dish, drizzle with olive oil, honey, salt and pepper. In oven 180 c (with parnips I usually do 35-40 mins not sure about carrots)

Peel carrots, don't cut them up, blanche, pat dry, brush with slightly diluted honey, place on oiled baking tray and roast uncovered for about 30-45m.

You can mix a little crushed garlic/freshly ground black pepper/grainy mustard/herbs/soy sauce/chilli or combinations of these with the honey, and/or sprinkle with sea salt before roasting.

I like using thin carrots for roasting (though I don't usually use honey but oil, or duck fat if to serve with poulty) because I like the way they shrivel up and caramelise. Thick carrots keep more texture than thin ones.
