When you slow cook meat how do you coordinate everything else?

I usually do a slow cooked piece of meat when I do a roast but I can't for the life of me remember how I then coordinate my yorkshires and potatoes with only one oven. In theory I should be down at 110c at the time my potatoes should go in but that obviously won't work. Do meat earlier and rest for ages?

The slow cooked meat can be taken out covered in a couple layers of foil - it will stay warm for a good 45 minutes. The temp of the oven ramped up to 200C with the pud trays in - heat until smoking and then put the batter in. Reduce oven to 180 deg after 5 min and put the roasties in ( parboiled).

I wrap the meat in foil and then a thick towel - it stays warm for ages that way...at least as long as it takes to cook all the accompaniments.
