Cooking frozen gammon

I very rarely cook meat, so when I do I don't have a bloody clue, especially when it comes to leftovers!

I cooked a gammon joint on Sunday, and froze some of it in slices for sandwiches. The rest I cut into little pieces and froze to use for things like pizzas, omelettes etc.

My question is, do I need to defrost the little pieces before using them, or can I just pick a few out and chuck them in whatever I'm cooking? I was thinking of making a frittata this evening and figured that with them being small pieces they'd be ok from frozen. Not sure though!

It's usually better to let things defrost but, if the pieces are very small and you make sure they are reheated to piping hot then you'd be fine. I would defrost for an omelette therefore because not a lot of heat is involved but add frozen to a pizza which is baked at a much higher temperature.
