as much 'just chuck it in the pan and leave it for an hour' would be great!
meat or veggie is fine

I usually do the whole palaver, grind the spices ect BUT the easiest way of making a curry imo is to buy a jar of pataks curry paste, fry off veg and meat, add paste, add a tin of tomatoes and a bit of stock and let it cook for 30/40 mins

this is gorgeous and ready in half an hour.

You'll need cooked meat in some form! I ususally use 2/3 chicken breasts for this recipe.

  • Make 1 pint of chicken stock up (I just use a normal chicken stock cube)
  • Chop onion, green pepper and 2 celery sticks.

fry in oil til soft
  • Add chicken and mix well
  • Add 1xcrushed garlic clove, 1 tsp curry powder, 1 tsp turmeric, 1 tsp ground ginger and 1 tbsp plain flour-mix and coat well.
  • Stir in the stock adding a little at a time as you don't want the sauce too thin.

Let it simmer for 20mins and you're done. Serve with rice.

Cannot fault this as it's really yum and ms ds (3) eats bowlfuls of it.

Chickpea Curry

1 large onion, chopped
1 1/2 tbsp vegetable oil
2 garlic cloves,crushed
1/2 tsp chilli powder
1 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp ground ginger
1 x 400g can chopped tomatoes
1 tbsp tomato puree
2 x 400g can chickpeas
450ml vegetable stock (made with stock cube)

Fry onion in oil until soft. Add garlic and spices and cook for 4-5 mins over medium heat.
Add remaining ingredients and bring to boil, then cover and simmer for 1hr.

Tastes much better made in the morning and heated up for evening and serve with rice.

Hope you like this one - it seems to fulfil all your criteria

if you want a quick curry, I do a quick lamb one (takes about 15 minutes to prepare before bunging in oven)

Fry lamb till browned (in the casserole pot), pour in 1 tub of creme fraiche, add a few tablespoons of curry powder, add a tin of flageolet beans and around half a cut up cabbage. If there's not enough liquid, shove in some water and bung in the oven for a couple of hours. It's really delicious.

There are some other recipes I do with proper spices but they always take me a bit longer!

would love to help with that one popsy but my DSs are not exactly advernturous when it comes to meal times

It's not too hot - you could always put a bit less chilli in it if you were worried. DH and I do like quite hot food and this is one of the milder ones though.

I did adapt it for D2 when he was a baby - did half the quantity but the same of tomatoes and paprika and ginger instead of all the spices. He used to wolf it down - ah - those were the days.....

I reheat it in the pan on top of the stove.

Oven might dry it out a bit? Don't know - never tried!

Hope you like it

you're more than welcome

I'm always amazed by that recipe - I found it in a Tesco magazine - it's cheap, straightforward, healthy and takes no time at all to prepare and so many people I've passed it on to have really like it!
