Well, it's the ultimate fast food after all and a vehicle for anything you fancy but.... We seem to eat it all the time.

Give me your top three quick family meals that don't include pasta...

I need inspiration!

Rice salad -
Fry shallots or onions while the rice is cooking - chuck frozen peas/sweetcorn into the rice about 2 minutes before the end of cooking.
At same time - hard boil an egg per person - shell and chop up
When rice has been drained, chuck it back in the pan and add the onions and egg - you can then add tuna/cooked chicken/ shredded Parma ham/ gammon
Season well with salt and pepper , and depending on taste either some salad dressing/salad cream or mayonnaise to taste.
Mix well.
Done !
I cook the rice in water that has a vegetable stock cube in it for extra flavour

Beef stew with tomatoes with boiled little potatoes or mash, or make it spicy add olives or sweet potato and serve with rice.

Poached or steamed chicken or fish with heaps of different veggies. Can be served with whole giant couscous/chickpea salad or bread rolls.

Omelettes containing lots of veg. Either do one big one if you have a big enough pan or individual ones if you have a small one and everyone likes different things.
