fermented vegetables - does anyone here do them?

I've heard that a great way to make vegetables more nutritious is to ferment them. I've only had cabbage and that was horrible. Does anyone here ferment tasty veg and have easy recipes?

Fermented cabbage would be sauerkraut. Maybe see if you can Google variations on that.

Kimchee is pretty easy to make and great if you like hot food. It's Korean fermented cabbage. Lots of recipes online.
