Bought a whole bird today as it is so much cheaper than chicken but I haven't a clue what to do with it. Help please! !

My uncle, who rears and shoots pheasants, always joints them up for the pot and casseroles them with chunky bacon, button onions/shallots and lashings of red wine. Sort of Coq Au Vin style.

Oh thanks. That's an idea. I was just going to roast it but I was worried it might be dry

Pot roast with veg and vermouth,

If you have a slow cooker- brown the bird, wrapped it in bacon and pop it on with some celery,Carrots, bacon and chestnuts and a splash of white wine. Mash alongside, yumSmile

If roasting alone wrap in pancetta or bacon and roast upside down for three quarters of cooking time

Delia has a good recipe. The stuffing and basting stop it getting dry. Remember to watch out for shot, you don't want to damage your teeth at Christmas! www.deliaonline.com/recipes/main-ingredient/poultry-and-game/pheasant/roast-pheasants-with-chestnut-stuffing-and-port-and-chestnut-sauce.html
