Vegetable side dishes

I'm trying to get my 2 toddlers to eat more vegetables and try new things.

Can you tell me your favourite, vegetable side dishes please?

How are they at eating veg? Could you shove some extra in main dishes? My fave Mediterranean roasted veg, roasted cabbage, asparagus with lemon (sometimes also a little cheese sauce and parma ham), spicy cauliflower cheese, HM coleslaw, ratatouille (nice as a main also), cheesey leeks, off the top of my head.

Thanks for the suggestions. I like the sound of cheesy leeks and I've never thought to roast cabbage before, so I'll have to give that a go.

They aren't too bad. They prefer things with a bit of flavour. They wouldnt just eat boiled plain veg iykwim? I try and add as many into their meals as possible if we have stuff like pasta or casseroles. but some times it's easier to have a side dish with meat ect.

I don't like them to eat too much fruit because of the sugar in it. So I'm struggling with getting '5 a day'.

I do cauliflower cheese, but add fried onions and bits of bacon to it - you can add almost any other veg to this I serve it with baked potatoes. I also do sweated leeks, put halved hard boiled eggs on top, cover with cheese sauce and pop in the oven to brown. I tend to put a lot of veg in my pasta bakes and do a lot of vegetable stir fries

Swede and carrots mashed up together with butter it slightly sweet and creamy.
