What healthy breakfasts can I throw at the children?

School mornings are a rush in my house and yes, I know I could get up earlier, lay uniforms out the night before etc and lovingly boil them an egg each. But the reality is that most days we are all grabbing toast at best and chocolate muffins at worst Blush and running out the door.
What can I give them that is healthy, oh, and cheap?

Don't ask me. One day last week I came out of the shower to find ds eating toasted chocolate cake with Nutella on it. Apparently "there wasn't anything else". I looked. He was right....

Could you make banana raisin muffins and freeze them? I keep mini ones in the freezer fire my one-yr old, although he turns his nose up at them so we end up eating them...

Other than that - bagels are quick to toast, and filling. Um, cereal bars, in an emergency?

I find this hard too, DD and DS are really slow eaters and I'm already getting worried about getting her out to school next year! I find banana pancakes great on the go, or even just a banana in an emergency.

Flapjack and a beaker of milk? How about baking a batch of these Flapjacks on Sunday - would be cheaper and healthier than the chocolate muffins. Would keep well for a week. Take toothbrushes with you if no time before leaving home!!!

Weetabix or shredded wheat with milk and fresh fruit

Porridge with fresh/dried fruit

Homemade healthy breakfast muffins

If time, homemade banana pancakes (no sugar and use 50% wholemeal flour)

Natural yoghurt sprinkled with granola and fresh/dried fruit

Peanut butter sandwich and a piece of fruit

If you have a sandwich maker then toasties made with granary/wholemeal bread and any combination of cheese, egg, ham or tomato etc might go down well. Or grated apple, sultanas and cinnamon for a sweet version.

Peanut butter on toast is a good option - you can always add surreptitious Nutella to it if you live in Hak's house or mine.

I like DS to have hot breakfast in winter months so porridge or beans on brown toast.

I leave house at 7.15am....I HAVE to do quick breakfasts. DS doesn't do dairy so won't have cereal & milk and toast is rubbish without lashings of butter Smile

Cereal with milk sounds quick but takes ages to eat
I make dd2 an egg pancake
-whisk up an egg

  • oil onto crepe pan, heat , wipe with kitchen roll
  • pour egg on, swirl to cover pan, cook, flip, cook, serve

Takes minutes and is eaten v fast.

I need to have uniform out and packed lunches done.

However, mine eat......

Pancakes
Cereal
Scrambled eggs
Baked beans
Bacon
Pain au chocolate
Tea and biscuits

I seriously would work with the toast. You are not, by the sound of it, going to start doing advance baking. Slosh beans on the toast (heat up while it's toasting)? An egg can be scrambled or poached v quickly in the microwave if you can manage that. Cream cheese is nice on toast too. Especially garlicky cream cheese. And almond butter (quite readily available) is terrific.

It is also nice to mix peanut butter with hot lime pickle on toast but you may prefer this more than the kidsGrin.

We generally do have boiled eggs, because they are quick. They are not lovingly boiled. The breakfast routine tends to go : put eggs on to cook, make toast, boil kettle, straighten hair (our only mirror near a socket is in the kitchen), butter toast, give out eggs.

We also eat peanut butter on toast, porridge or Greek yogurt with frozen berries. In winter, I heat up the berries in the microwave.

On less healthy days, we have bran flakes or Cheerios.

It is terrific.Grin My Indian mother taught it to me. Makes a v nice lunch too. A strong coffee or poss tea goes well with it too.Grin

I have tried the healthier muffin route before. It's just that healthier muffins aren't that appealing. Ditto the flapjacks. I've made Hugh Fearnly Whittingsall's healthy breakfast bar things, which were delicious but the DCs turned their noses up and I had to eat them all.
DC's won't eat weetabix or shredded wheat without piles of sugar on top.
Bagels-yes!
Yoghurt and fruit-yes!
Ham has been known to be eaten but is it healthy?
Porridge takes too long now the microwave has gone kaput.
Smoothies would be too much faffing of a rushed morning surely?
DC2 likes a peanut butter sandwich, that is true.

Should mention that DCs are Picky and Fussy.

My banana cakes come from a blow blog, can't remember the name though! Recipe is
1banana mashed, bigger and brown is best

0.5 cup milk
0.5 cup plain yoghurt
1 egg
1 cup self raising flour
1 tspn baking powder.
Mix all the wet ingredients, add flour and baking powder and mix well. Drop a spoonful into a hot frying pan (I don't need any oil or butter in my non stick pan). Flip them when they bubble on top. I get about 12 from this recipe and they keep in the fridge for about 4 days.
