I need inspiration - chicken for tea....

got some chicken, pots, veg inc a red pepper.

Fed up of 'chicken cassrole'

Anyone help?

make some giant chicken nuggets! (enid's recipe)
I made them for dd last night but she was ill so I scoffed them instead, they are delicious

Or how about stuffing them with something and pan-frying?

made a nice chilli chicken in slow cooker the other day

got some chilli, onions, dried cumin, garlic, celery
fried them with chicken
added tinned tomatoes
fried peppers
boiled up then put in slow cooker
was nice

thanks guys. Might try out some chicken nuggets. Altho I doubt my h will eat that, and I usually leave him his to reat when he comes home from work....

chilli chicken sounds good too

ok, if chicken breast, batter the little buggers with a rolling pin until thin (I put the chicken inside a cellophane bag 1st). Pan fry with some muchrooms. When cooked, spead with a layer of pesto, then a layer of mozarella (have been known to use sliced babybels in this house) and flip, so cheese melts. It is so tasty - serve with Potato wedges and some other veg.

Season chicken breasts with black pepper and garlic (optional). Rub with a small amount of olive oil, wrap bacon strips around each breast and sprinkle grated cheese on top. Cook in oven until done.

Mozzarella is good or just use cheddar.
