Another beef brisket question

Does it have to be covered or could I use my small roaster? It's not that big a joint for using my covered tin so not sure whether to use that anyway or my small glass roaster.

Personally I would cover it. Can you put a bit of foil on top?

p.s. Forgot to add - glass roaster sounds perfect as you want some moisture in there.

yes cover. with brisket you want to keep the moisture in

No foil until I do shopping mid-week. I'll use the big roaster with the lid (I think it's a casserole dish actually but it does the job!).

(Is it like cooking pulled pork? Long & slow so it melts in the mouth?)
