I'm guessing there aint one,but am sick of the sight of them nestling mournfully in cupboard.

This is in one of my veggie recipe books - haven't cooked this recipe myself though.

Aduki bean and red cabbage casserole


175g aduki beans
175g mushrooms
1 garlic clove
4 tspns olive oil

450g red cabbage
3 med red onions
2 tbspns tahini
2 tbspns tomato paste
850ml veg stock
1 tspn caraway seeds
2 tspns dried dill
2 tbspns raisins
salt and pepper if req

Soak aduki beans for 3 hours (at least) in lots of boiling water, rinse well, cover with boiling water and cook for approx 40 mins until soft.

Chop mushrooms (or leave whole if small), crush garlic clove.

Sweat mushrooms and garlic with 2 tspns of the olive oil in a saucepan or casserole dish until soft, remove from pan.

Cut red cabbage into rough chunks and onions into large segments. Add onions and cabbage to the pan with remaining oil and sweat until they start to soften.

Stir the tahini and tomato paste in a little stock to dissolve, add to the pan along with remaining stock, mushrooms, aduki beans, caraway seeds, dill and raisins.

Transfer to ovenproof dish if necessary.

Place in preheated oven 200C/400F/gas mark 6 for 1-1 and qtr hours or until veg and beans cooked and most of liquid absorbed.

Optional:2 tbspns chopped fresh parsley - stir in just before serving.

Delia Smith's Complete Cookery Course has a recipe for brown rice and aduki bean salad. It makes a huge amount so you may need to halve it. I can't remember the exact quantities, but I think you need about 8 oz rice, 4 oz aduki beans, 1/2 cucumber, 1 green pepper, 1 stick of celery, and some spring onions, all chopped. Soak the beans overnight and cook. Cook the rice. Mix all ingredients together and dress in a vinaigrette dressing while still hot.

Moondog, in my vegetarian phase I used to make a yummy bean spread (from the most sadly titled cookbook ever, 'The Single Vegan') - can't remember exactly what else was in it but I'd guess a bit of onion, either tomato puree or soy sauce, maybe tahini, maybe lemon juice, and you mash it up and have it on thick wholemeal toast with lots of butter. Sorry, soya margarine.

I used to cook Red Dragon pie quite often in my studenty-vegetarian-youthfulness. It was pretty good if i remember rightly.

Must try it again with my similarly 'mournfully nestling' adzuki beans - and hope my food tastes haven't changed too much in the intervening 20 years. Does Jamie Oliver do anything with them? Can't imagine Gordon Ramsay with a favourite adzuki bean recipe though
