Roasting in the BBQ

We've recently upgraded ourselves to a proper kettle BBQ that uses real charcoal having only had a gas grilling one for years.

We have roasted a chicken and leg of lamb whole in it the past two sundays and it's been fantastic.

As we are a bit new to this "cook a joint" on it, and not just using it as an outside grill, I am looking for other ideas on doing joints/larger pieces of meat on it please. Many thanks

As it happens I'm going to have a crack at producing a 'pulled pork' style shoulder joint in mine tomorrow night. Just researching a few recipes. I've done whole salmon before now in foil. I have a friend that cooks his Christmas Turkey in his regardless of the weather. I rarely use mine as a grill any more, even for sausages, kebabs or burgers. They all get 'baked/roasted' in the centre over a drip tray and then given a quick blast directly over the coals at the end to add a little charring.

We do:

Pulled pork - you may need to start it off in the oven though as it needs a loooooooong time to be nice and you will have to faff about emptying and adding fresh coals.

Beer can chicken

Brisket

Sirloin of beef (expensive but really worth it for a special occasion)

Butterflied leg of lamb

I love mine, can't get my head around using a gas bbq at all.

Now I really want to get a smoker!
