I had a bacon a leek sarnie once which was delish! It was one of those posh deli sarnie's, grat bread, cream cheese spread on it, thick bacon and thinly sliced raw leeks.

You could make a white sauce and add fried leeks and bacon and mix it with pasta and lots of balck pepper.

Or get puff pastry and roll your cooked bacon, leeks and some cheese in and bake...

If you have chicken breasts you could wrap them in bacon and make a leek and cheese sauce?

Fry bacon & leeks in a little oil until soft

In another pan, cook pasta

In yet another pan, make white sauce (melt butter, whisk in plain flour to make a paste then gradually whisk in milk and heat until thick - sorry, I don't know any measurements!)

Mix bacon, leeks and pasta together in a shallow dish then pour over white sauce and mix gently.

Sprinkle over breadcrumbs (and cayenne pepper if you're feeling adventurous) and bake in oven at about 180 degrees C

HTH

Guys, these are great. And so many.

I'm going to go for Flashingnose's bake for dinner tonight and then the leek & bacon sarnie for tomorrow lunch.

Thanks for coming back so quickly!

This is a recipe my mum used to make and it reminds me of winter evenings getting back from school. Its not elaborate but tastes really nice.(IMO).
To serve 4.

2lb potatoes
3 large leeks
6 slices bacon
Approx 8oz grated cheddar cheese
Tin of chicken soup.(mum always uses campbells but sure any would do!!!)

Part boil potatoes and leeks.Place in ovenproof dish and add some of the cheese.Fry the bacon and add to dish.Pour over soup.Cover with rest of cheese.Place in moderate oven for approx 45 minutes or until cheese nicely golden and bubbly and potatoes fully cooked.

Not good if on diet though....all that cheese and bacon!!!!
