Please help me use up a glut of parsley

I have loads of the stuff Grin
I planted some in a tub and it's gone crazy. My plan is to have some growing all year round so I want to cut it back to encourage it to keep growing.
Now I've got loads I can't remember why I wanted it! Please hit me with your best recipes for using up parsley (and any other you might think of, come to that - I've got several in a similar quantity to the parsley). Thanks.

This salsa salad has a good big bunch of parsley in it (and coriander, chillies, spring onions, tomatoes, cucumber...)

Stick it in bags in the freezer as it is. When you want some you can just crumble it in from frozen. Saves chopping!

Parsley pesto. Big handful of parsley, garlic, Parmesan, lemon juice and olive oil. Blitz in food processor. Delicious on pasta.

Make a big batch of parsley sauce and freeze it?

Parsley soup is delicious but it takes a lot of parsley.

Wow thanks all, some great suggestions. Why hadn't I thought of parsley pesto? And a great freezing tip too.

I second tabbouleh, made it tonight using a Felicity Cloake recipe from the Guardian online. Uses loads of parsley and is very nice.

Oh, but I used couscous because it's easier to find and cheaper.

Another batch of mint is ready to be blitzed in white malt vinegar (until the m/c screams its protest) and bottled in jars. Good mixed with yoghurt as a raita, keeps from one year to the next. Doesn't have a vinegar taste to it atorl.
PS we eat a lot of Indian stuff and the yoghurt's got to be good for the children, no?
How about courgettes? Oh, and cucumbers - lots of cucumbers...
