What's your favourite soup recipe?

We tend to make veg soup in a 'bung a load of different veg in and blitz it up at the end' kind of style. We don't tend to make specific soups if that makes sense?

We have family for lunch on Sunday and are trying to decide on starter and I was thinking maybe soup.

I think we're going to have salmons for main if that helps.

So which are your favourite soup recipes?

Sweet potato and chorizo

Pea and mint

Pea, garlic and mint
Rough recipe as I tend to taste and add plus adjust quantity

Roast several cloves in preparation
Dice onion and potato cook in butter till soft
Cook pkt petis pois in veg stock
Add butter/onion/potato mix
Add middle of roasted garlic
Some mint sauce
Blitz
Add creme fraiche
Season

Gazpacho when it's hot
Butternut squash, chestnut and chorizo when it's cold

I mean the weather smile

And ribollita (beans and kale) anytime.
