meals that can be prepared the night before

Hi I find the only time I can cook a decent meal is in the evening after the kids are asleep, clingy baby, work 2/3 day a week also baby goes to bed at 6:30 and I like to spend an hour or so completely uninteruppted with the eldest as baby would literally like to be glued to me!

I'm looking for some recipes that can literally just be shoved in the oven so far I have:

Lasagne
Pasta bakes
Cottage pie
Fish pie
Spaghetti bolenase

Plz don't suggest soup as all though I love it my 4 year old has deemed it 'baby food's due to all the purees and won't eat it!
Anything non minced base would be great also

As a working parent most of our meals are either quick to make or prepared in advance too.

Things like beef in beer or chilli beef stew can be prepared in advance

Or things you can part make and finish off quickly later eg I will usually make the sauce for these the day before and then just quickly do meatballs, grill chicken, pasta/rice/potatoes while reheating

I call these fridge to ovens! Especially like making them in the big foil containers for minimal washing up! Guilty of doing the mince based dishes on too regular a basis I've also been looking at alternatives. So far I've tried:

  1. Chicken Enchiladas. Just make up as usual and store in fridge before putting in the oven, serve with bagged salad
  2. Chicken and broccoli bake, basically cooked chicken and broccoli in a cheesy sauce. Add other veg as you please. If you like top with breadcrumbs.
  3. Veggie lasagne, my favourite is garlic mushroom, spinach and hazelnut.
  4. Cajun salmon parcels. Rub Cajun paste on salmon fillet and wrap in ready made puff pastry, store in fridge and then egg wash at last minute and pop in the oven. Again, serve with salad.
  5. Quiche. Endless options and lovely cold if you can't be bothered to heat the oven!


All have turned out fine!

Tortilla ?
Casseroles- chicken, beef etc can all be reheated next day
Curry?
Stews?

It's a good idea to prep tray bakes and store in the fridge- a chicken and chorizo tray bake with new pots and veg can be prepped and seasoned ready to bake next day, or a sausage bake- even a toad in the hole- put sausages abs onions ready in tray- mix and leave batter in the fridge- shove in oven next day.

Pies can be an option, if you make the filling the night before/ chicken and mushroom, steak and kidney, chicken and leek- top with ready made pastry sheet and bake the next day.

Chicken pie.

Raw chicken with punnet tomatoes and garlic. Roast in oven.
Stir in creme fraiche. Dinner. Done!
