Sausage making?

has anyone tried it? I'd love to but the machines seem quite expensive, which I wouldn't mind if i was going to use it!

Which machine are you looking at? I'd like to try it too and have seen a mincer/pasta maker in Lakeland that has a sausage making attachment- about £25 I think. I've also seen dedicated sausage makers in Smallholder magazine, but they are more like £60 - £100 and you'd need to eat a lot of sausages to justify that!

The River Cottage Family Cookbook tells you how to do it without resorting to a fancy machine.

If you have a mincer, you need to double mince your meat. If not, ask your butcher to do it. Then mix meat with seasoning and breadcrumbs. Use a funnel to push the mixture through into sausage skins (bought from butcher).

Et voila! So easy you can do it with the children

Have you seen www.sausagemaking.co.uk and www.designasausage.com . Fantastic sites and they are mothers too. Definately worth a look.

I have made sausages in the past using ground meat and fat, seasonings and skins bought from butcher. I filled them using a piping bag, it worked really well and I even made some chorizo type ones with chilli, grlic and red wine, yum!!

Any ideas where to get a 'sausage stuffer' from (cheaply). Have tried on ebay. Can't find the one mentioned below on the Lakeland website. Looked on all the sausage mking websites but they all seem to be £50+. I'm thinking of one of those small cheap plastic stuffer things that I could use every so often when I felt like being a little creative!
Any ideas?
