Please share your favourite buffet lunch salad ideas

I've been asked to bring an "interesting" salad to a family Easter buffet lunch on Saturday. There'll be about 15 people to cater for. Should I do a couple of different ones or one biggie? Need some inspiration please. Please share your favourites.

Greek salad-cucumber, cherry tomatoes, red onion, feta cheese and olives.

Rice salad - rice, peas, sweetcorn.

I would make several small ones to hopefully appeal to everyone.

I don't know if this is interesting but I love Waldorf salad.

Or coleslaw with peanuts and broccoli - gorgeous

We've just had a salad of mixed leaves, watercress, chopped fine beans/mangetout/sugarsnaps, quartered cherry toms, red and yellow pepper, red cabbage and sunflower/pumpkin seeds. Olive oil and lemon juice to make it shiny and yummy.

I am on a salad kick at the moment because I'm fat and have various health complications. So my recent meals have included:

frisee and lollo rosso with cubes of beetroot, red kidney beans, cucumber, raw mushrooms, apple and cashew nuts

iceberg lettuce shredded with red and white cabbage, cannellini beans, sultanas, walnuts, radishes and grated carrot

spinach and watercress with redskin peanuts, brown lentils, black olives, celery, cherry tomatoes, cucumber, green pepper and finely sliced red onion

chopped up mangetout/sugarsnaps/fine beans with baby courgette (raw and thinly sliced), parsley, chives, celery and pomegranate seeds

If it's lunch I have a blob of cottage cheese or houmous with it, if dinner I have a fish fillet (salmon, cod, mackerel) or a bit of tinned tuna, or some chicken breast depending on what dh and the kids are having

not to everyone's taste I'm sure, but maybe some of it will be useful!

I really like a simple sliced tomato and sliced onion salad, dressed with naice olive oil. looks good in a dish, nice colours, a change from all the green.

Tabbouleh with bulgar wheat, cucumber, celery, spring onion and mint, dressed with olive oil and seasoned.

Tomato, mozzarella, fresh basil and pesto.

Homemade coleslaw is always a winner too,

Or orzo mixed with sundried tomato paste, fresh basil leaves, a mix of sundried tomatoes and cherry tomatoes.

I love salad-y buffets!

Big hit at BBQs last year - from Veg book. Pearl barley, butternut squash, fennel and feta. You cook the pearl barley then mix in squash and fennel which have been roasted in olive oil until soft. Toss through some feta cheese and some walnuts. Is nice as a main veggie meal too. Tasty hot or cold.

A delicious simple one - get a potato peeler and slice ribbons of raw courgette into a big bowl. Finely chop chilli and tear off some mint leaves. Toss it all together with some olive oil. Really tasty.

Brown rice, with diced red pepper, spring onions, sultanas, lots of parsley and a dressing made with soy sauce and oil with ground ginger, pepper and garlic. It was a web find; look on the distracted housewife site...

Loads of great ideas thanks. Off to the shops tomorrow so will make a list. Thinking of making a chickeny one and a veggie one. Greek salad probably.
