Glut of Chicken Thigh Fillets - WWYD?

I have two packs, can always freeze one of course, but not masses of freezer space so would like to use/eat/freeze leftovers as a preference.

So what shall I do with them tomorrow? Short on time as out all day and won't be back with any ingredients until 6-ish so either needs to be quick-ish cook or something slower on Thursday!?

They are currently whole pieces but of course could be chopped! Just need some inspiration as brain gone dead.

Soup! Brown the thighs then add stock, simmer for 30 mins then pull chicken off thighs and add veg. Simmer for 20 mins or so - delish.

Piri piri chicken. Couple of peppers, an onion & 1tsp ground coriander mixed together with a little oil. Chicken coated with a mixture of 1/2 tsp coriander leaf, 1tsp crushed chillies, 1tsp garlic granules, 1tsp paprika, 1tsp lemon pepper and a little oil. Bung a bit of lemon juice in if you have any knocking about. Mix it all together and cook for 45mins at 200 degrees/gas mark 6 Smile

Teriyaki chicken. Soy sauce, runny honey, grated fresh ginger and a bit of five spice powder, if you have it- marinate the cubed chicken thigh meat. Fry with the marinade and serve with rice.

You can stir fry veg and add that - I do it with finely sliced red onion, peppers, bean sprouts, and make a bit extra marinade. I fry the chicken, then the veg, then put the chicken back in with the extra marinade and a bit of orange juice, then throw in rice noodles (fresh ones from the salad section of fresh fruit and veg at the supermarket) and the extra marinade - the OJ steams to heat the noodles, and it's a one pot meal.

Not sure if link will work but one pot Spanish chicken,made a few times and tweaked it - I use sweet potato instead of normal ones.

Put thighs in a dish with new potatoes, chorizo, onion, garlic and drizzle with olive oil. Cook in the oven for 45 minutes and serve with salad. Easy and delish Smile

In a roasting tin rub in olive oil. Cut lemons in quarters place in tin add some lemon juice. Cut garlic cloves in half and place in gaps. Lots of black pepper and cook. Delicious hot with rice or roast new potatoes. Lovely cold as a snack.
