**foxinsocks** i made your coffee cake recipe

and it was lovely . the entire cake got eaten in a day and a half, so i made it again yesterday and it was just as good on the 2nd attempt. it was so nice to hand out slices of cake to our visitors yesterday without catching dh raising his eyebrows behind my back...

so - PHEW - i won't be donating my baking tins to science after all. was the recipe from that baking book you mentioned?

I'm fainting in shock because I am a lazy cook who likes simple recipes so I'm always a bit nervous of giving out 'easy' recipes in case people think they are shite!!

I am so so pleased it worked for you. Yes, it was a recipe from that book - I may have altered it slightly (possibly, I may have taken out a complicated step or said to shove it all in a bowl when things should have been added slowly one at a time but I always make this recipe so I've tried and tested my short cuts first!).

I posted it in the middle of a thread so here's my post:

Something that revolutionised my baking was buying Mary Berry's Ultimate Cake Book (must be this one as it has pictures!). I had never baked a cake before I had kids (don't have a sweet tooth) and this book is excellent. It also advocates the 'bung it all in a bowl and mix' approach which really appeals to my style of cooking.

Anyhoo, here is the simplest coffee cake in the world

3 eggs
6oz soft butter
6oz caster sugar
6oz sr flour
1 and half teaspoons baking powder
2 tablespoons CRUSHED instant coffee granules (so crushed with the back of a spooon to a fine powder)

Shove all in a bowl (if the butter is too hard, soften it first in the microwave) and mix it all up till it is all blended nicely. Put it in 2 7inch cake tins and put in oven on about 170-180C for 25 mins (mine normally only takes 15-20 but have fan oven - it's done when a fork goes in and comes out clean but don't be tempted to try till at least 15/20 mins!). Should say I have a hot oven - think most ovens prob need to be on 180C

Filling/Topping
2oz soft butter
6oz icing sugar
make up some black coffee (v strong) - about a third of a cup and add this bit by bit to the above mixture (butter and icing sugar) until it's the consistency of icing that you like

sorry - didn't get chance to get back online yesterday. yes it was very easy & tasty and got enthusiastic compliments all round . i might think about getting that book - will have a look on amazon / ebay.
