I need the perfect pudding/dessert after a hearty stew....

We have dinner guests, and I am on my own with the kids, so need something I can either make in advance, preferably the day before, or which is really really easy.

Perhaps a trifle? The trifle can be started on thursday night, and add, the rest friday?

Tiramisu
Pavlova
Apple crumble
Malva pudding (south african dessert, easy to make can bake the day before then just reheat and add syrup before serving)
Or buy some nice cheeses and maybe some maccarons and petit fours and just serve that with coffee and/or a nice pudding wine.

this lemon tart is EASY - because you don't have to make the pastry. I have made the pastry and it's very nice but a bought case is fine too. I usually find there is more filling than will fit in the case so last time I bought some little cases and made individual tarts as well.

chocolate mousse can be made the day before and left in the fridge

serve with raspberries, cream and shortbread (homemade or bought)

Panna cotta or a no-cook cheesecake of some kind, perhaps? Or bread and butter pudding can usually be prepared a bit in advance, left to sit and then bunged in the oven just as you sit down to eat. I love planning puddings.

which could be made the day before but I second the selection of cheese bics, macaroons, maybe finger fruit like grapes or strawbs.
Lengthens the meal.

Lemon syllabub - it's just cream, lemon juice, brandy and sugar.

Serve with either langue du chat or, I think, boudoir biscuits (the ones a bit like sponge fingers)

I'm doing a very rich Daube de Boeuf for friends this weekend and am thinking about doing this for pud as it looks easy and not too heavy (lashings of cream aside...).

Easiest, yummiest pudding ever:
1 pot good quality greek yoghurt
1 jar (plus a bit more depending on your preference) lemon curd

Mix well and serve in souffle bowl with a bit of lemon zest to make it look a bit more impressive than it really is.

Seriously, it's amazing and ridiculously easy.

Eton mess? Buy ready made meringue. There are some nice raspberries coming from Spain in Tesco at the moment. Or you could use blueberries.

I make a lemon (or lime) mousse by mixing a tin of sweetened condensed milk with the juice and zest of 3 lemons, and then folding in some whipped cream.

I have settled on a "red berry trifle". Will wash and freeze rasberries today. Rasberry jelly with rasberries bottom laywer. Custard layer, victoria sponge layer, rasberies layer, cream, strawberries and flaked almonds.

The guests are Norwegian, so this will be a real treat for them! Grin
