Inspire me - 'special' dinner for 2..... With minimal effort

Any good ideas welcomed!

We eat (almost) anything, all meats/fish, carbs & veg.

I just fancy something really nice for dinner (DC going out) but can't be bothered to do too much slaving. Don't want to buy a 'ready meal' type though, want 'proper' food.

Plain steak, mushrooms etc is my usual fall-back, I am prepared to do a little more tonight, a proper recipe. smile
LP's meatball recipe looks scrummy. I will not make it tonight though as I think it would go down very well indeed with DS so it is on the menu tomorrow for all the family. At least that's one meal sorted!
As for the tagine and the salad, well perhaps we're fussier than I thought. DH would not be happy with a salad for his dinner! And would also be less than thrilled with fruity cous cous.

Rack of lamb, a few sliced garlic cloves in the roasting dish, lamb on top of them, score the fat of the lamb and pat on powdered mustard or spread on ready made mustard, drizzle on a little oil, roast in a hot oven.
Goes well with potatoes dauphinois or new pots, and a green veg, make gravy or nice with sauce Diane too.

Pudding, half dip some strawberries in melted dark or chilli chocolate and leave to set. Beat some liqueur in cream or soft cheese and serve a dollop of this with the strawberries to dip into it, add little biscuits if you have some.

Oh, I thought I had posted hours ago with my decision, it's not here, grrrr.

We're having this Delia smoked haddock. With ready made mash & micro in the bag spinach.

Think it fits the bill, will be quick & easy & no chopping & minimal mess.

stealth that is a quality treat, enjoy.

mrsp & pinter, funnily enough I had tapas last night, including calamari with garlic mayo (not made by me I might add!)

all now rack of lamb also would've fitted the bill well too. Love dauphinoise & can tolerate shop bought too!

I have done a couple of LPs before actually, a chocolate cheesecake (good but won't repeat) and individual beef wellingtons with a creamy mushroom sauce, that I've made many times and will continue to do so, it is lovely, quick and easy.

Slight problem with the meatballs, my local supermarket doesn't sell pineapple in syrup, only in juice! I think tHe syrup is probably essential for the sweet and sour so I need to shop again, further afield! Bought all other ingredients though so am ready when I locate the pineapple!

Oh that's a bugger. I think I used Tesco own this time. Previously it's been the bloody expensive branded ones. Grr. Hope you have some luck.
