I like it with gammon - I feel it needs some meat to go with it! Like the idea of sausages with it too, might have to do that this week.

I sometimes just do macaroni cheese with nothing else as a meal in itself. If I'm feeling virtuous we add broccoli or cauliflower. Bacon if there's leftover from a weekend bacon sarnie.

We have cauliflower mac & cheese with extra green veg. No need for any additional protein. I think there's a version in either Jamie's 30 or 15 minute meals.

I make this with broccoli, cauli and macaroni, loving the bacon idea too though, think I'll add that too.

Yum. Its a way of using up broccoli, cauliflower, leeks, open tins of sweetcorn etc in this house. The mac makes it feel like a meal, but sometimes its nice as a side Smile

I've made this a few times and it is fab! Also really reduces the calories compared to a traditional macaroni cheese. Yum!

Yes! I've also been known to chop celery, carrot, celeriac (basically any hard veg past its best) into pieces the same size as the pasta (penne in my case). Just throw it in the pan when you cook the pasta.

I do caulimac and cheese, but brollymac and cheese (with broccoli) is even better...Smile

Loving 'brollymac and cheese'.

We have this too - why would it not be considered a meal in itself when mac and cheese is?? I do sometimes add gammon if it's not our weekly veggie meal.

If anyone has tried a Romanescu then it is fab in mac and cheese too - less break-up-able than broccoli.

Sometimes I do it the Jamie was but others just normal mac and cheese but cook the cut up cauli along with the pasta. You need less past so less carbs = less calories as MiloBelle said

Kids love it (albeight one smothered in tomato sauce but hey-ho)

We did exactly this the other day - macaroni and cauliflower cheese, with a few peas and topped with some crispy bacon. Was lovely!
