We are going planning on going veggie for lent, but I'm not quite sure where to start!
We do eat veggie 3 days a week usually but it tends to be the same meals: soup, pasta with veggies, risotto. I don't think I've got enough in my repertoire to feel us nutritionally and in a way that won't completely bore us to death. I'm also used to cooking by seeing what I've got in my cupboard and planning a meal, much of my meal planning comes from what to do with a left over roast.
I have the river cottage veg every day book. It has some nice recipes but I don't think there is enough in there to live off. It's also quite meze based and I don't have time to make lots of little dishes.
Can anyone point me in the right direction please, with either a book or a meal planning website. Thanks
Check out "another dinner is possible" - can't remember who by, lots of recipes and info on nutrition etc. Also a table for fail safe veggie roast on store cupboard ingredients, mine is covered in food as that's how much we use it. DP just made amazing pizza tonight from it
Cranks, the original book. From the restaurant in the 70s so the recipes are simple, effective and not faffy at all. I find some modern veggie books just full of the most complicated 20 ingredient recipes and I can't be arsed to trudge around looking for ingredients.
The photos in the book look very brown though, but they are failsafe classics.
Cranks fast food is great, not a big fan of old school veggie food. I think the bbcgood food website is very useful. I never got on with Rose Elliot. A great book for every day is Food from the place below, I think you can get it from amazon.
I am veggie, but don't generally like veggie books, as they usually cover things I know how to make. I appreciate this may not be the case for you, but in case you need more inspiration ......
Non-veggie books, that have plenty of veggie stuff in them, that I really love cooking from, include Every Grain of Rice by Fuchsia Dunlop (Chinese, some great tofu dishes, if you want to try that, and plenty of veg dishes); Mexican Food made Simple by Thomasina Miers; Hairy Bikers curry book; Plenty and Jerusalem by Yotam Ottolenghi; either of the Greedy Italians books.
I have been heavily influenced by the Mumsnet cookery book club! All of the above have lots of great veggie recipes, but non veggie ones too which sounds like it will suit you
