Veg Box Challenge!!

Struggling to get through my veg box, I have a lot of carrots to use up!

We have one of those tiny fridges with a tiny freezer shelf at the top, so can't really make big batches of stuff and freeze, which is what my heart desires.

Could make a carrot cake, but don't have any other of the ingredients and could do without the temptation :)

Soup? Does anyone have any good recipes? And I don't think veg soup keeps very long in the fridge does it?

Anything a bit more exciting than soup?

Also have a glut of broccoli, potatoes, and a butternut squash, oh and half a swede from last week (going a bit soft!). So if you can combine those, double points!

(No kids and DH working allllll the time currently, so this 'Baby and Toddler' box is masses for me! Will cancel this coming week's one.)

Haha succinct as ever Cog :) This is their last chance as I kind of cancelled but they won me back with free wine. Think I'm gonna have to stop though. But it's so reasonable and so delicious!

I used to get a veg box, loved getting it but found it really difficult to keep using it all!

This is a gorgeous carrot and coriander soup and really easy to make.

You could make a veg curry with the rest or mash potatoes and swede together, steam the broccoli and roast cubes of the butternut with ginger and serve the lot with grilled sausages. Any leftover mash could be turned into fishcakes or the topping for shepherds pie...

I make a batch of veg soup every weekend and use it as comfort food all week (to stop me eating chocolate) It keeps fine in the fridge from Sun - Fri IME.

Can you get some Thai curry paste? All those veg in a red Thai curry would be lovely.

Making a pasta sauce with onion, tinned toms and carrot (cooked up and blended) is also easy and lovely.

Clearly I lack enough imagination to find a word that isn't 'lovely'. I blame sleep deprivation.

I grate carrots into most things btw, bolognaise sauce, the lentil curry I've made for tonight - they cook right down and make me feel slightly more virtuous.

I seem to make a lot of carrot salad: grate and season with dill, salt&pepper, vinegar and a tiny bit of sugar. Even better the next day.

I think you might have to go to fortnightly boxes Smile

Veg soup keeps OK in the fridge. Also, mashed swede, butternut squash and carrot mash to top cottage pie etc or to have instead of normal mash (season really well and maybe add some cheese). Make broccoli and cheese soup and add the swede as well as potatoes.

Btw swede keeps well if you keep it in a cool dark place, not the fridge - I never keep root veg in the fridge. If you get more root veg, keep in the box you have and cover with soil, and keep in the shed or a similar place.

Pigsus I never thought to keep the swede outside of the fridge. Which is silly because I don't refrigerate potatoes! Thanks.

Roasted carrots are nice I add some cumin or fenugreek seeds too. Don't add sugar they are sweet enough as they are. Jamie O's recipe here

Patatas bravas to which you could add chorizo. You'll need a tin of toms.

Butternut squash is nice roasted in chunks and served with garlic yogurt and lime juice and coriander.

Stir fried broccoli with sesame seeds, spring onions, soy sauce and egg noodles.

Grated carrot and potato make a nice layer in moussaka.

Do they offer a smaller veg box? Veg curry. Roasted squash is delicious. Carrots don't need to go in the fridge either.
