Veggie soups - inspiration please!

I have Christmas veg (uncooked) to use up. I could just make a massive vat of soup or I could make a few different ones. I would love to hear any tips, combos or recipes Smile

My veggies are:
Half kilo of sprouts
3 large parsnips
Half a cauliflower
One large leek
Plenty of carrots and potatoes

I also have a fairly well stocked herb/spice rack and some lardons in the fridge. And cheese.

I was thinking:
Sprout, carrot and lardon
Leek and potato
Spicy parsnip
Mish mash of whatever is left?

Come on lovely folk, give me soup inspiration!

I wouldn't put sprouts in a soup, tbh. so leave those asise.

roast root vegetable soup, cauliflour, carrots and potatoes - cube and roast in olive oil and seasoning, plus a scattering of herb like thyme or rosemary (tuck under veg so as not to burn) make a base out of leek and tiny bit of garlic fried, and some lardon add roast veg and stock. cook for 20 mins. blitz to taste. crispy fry lardons and scatter on top on serving.

cauliflower goes really well with spices such as cumin, so you could try that too, make it a bit creamy with milk.

I would however also suggest doing a roast veg (inc brussels) bubble and squeak. whack chopped veg in oven with olive oil and seasoning plus thyme, roast. meanwhile saute onions, a tad of garlic and some pancetta. when they are cooked toss into roasting veggies. serve with fried or poached egg on top.

You can also do a spicy version. yum.

Any lentils? Carrot and red lentil soup is lovely, as is green lentil, potato and parmesan soup.

creamy parsnip soup is nice, I like it spiced with wholegrain mustard, but it's not for everyone.

Have you a broccoli stalk left? People Chuck the stalk but it's lovely cooked into a broccoli and Stilton soup.

What's wrong with good old veg soup? All cooked, with some herbs, stock and a parmesan rind and blended? Lovely.

Though I second the Lady madame in saying sprouts are not for soup.

Cogent garden used to do a Christmas soup which was sprouts, turkey and cranberries. I am reasonably certain I copied it as it was really yummy. Try googling- sprouts are just mini cabbages!

yes. but you do have to be careful with cabbage and cabbage like things.

Either cook them really quickly or really really slowly...so be prepared to simmer a soup containing these for a good deal longer than normal!

Its to do with the sulphides released.

parsnip and apple, carrot and cumin (much better than with coriander) use potatoes as your thickener.

Roast the root veg in olive oil salt and pepper and then put into stock and bring to the boil
This liquidised is just magic, you can add cream if there's a bit left over too

It was my starter for our posh dinner party last night, I didn't tell them they were helping with left overs

So far I have made a spiced parsnip soup which was delicious.
