Tasty fish meals?

We're spending 2 weeks on a self-catering holiday on two Danish islands. There'll be tons of freshly caught fish on offer, but haven't a clue how to cook it (or even what's what when it comes to fish).

Does anyone have any really tasty simple recipes they could share?

take filleted fish or whole deboned fish - wrap in tinfoil with oil, lemon juice, herbs etc - add some lemon slices and bake in theoven for about 20 mins or until cooked -

Thanks coolmama that sounds easy I can cope with that. Hopefully the fish is filleted but I'll be buying it at the fish market so I suspect it will be totally grim with head on and those glassy eyes.... No idea how to fillet a fish in fact. I have a very fancy French cooking encyclopedia somewhere that dh saw fit to give me one Christmas. Might just check how complicated it is.

Found Cod's thread in the end KT but just had a quick look, I'll check it out tonight.

Does anyone have a nice (easy) recipe for a sauce to go with fish? Dd loves fish, they get really nice cooked meals in kindergarten and she always says the fish is so much nicer there and they serve it with yummy sauces. I tried a couple of sauces with fish at home but dd wasn't impressed. Seems I have a lot to learn

White fish goes really well with quite a simple tomato-based sauce. (bake the fish as coolmama suggested). cooked Puy lentils added to the sauce make nice contrast in texture too.(don't want to insult your intelligence by telling how to make a tomato sauce but if you're a cooking novice, tin chopped toms, splodge of tom puree, herbs, salt and pepper, little garlic, pinch sugar, can add onion of kids like it) simmer til reduced and thick)

Another fish question - I am allergic to it so know very little about what tastes nice with it although I'm an ok cook so could guess. But I want to give both my 2.5 year old and my 10 month old some tuna. I've got tins of tuna in spring water so there's no excessive oil or salt but what can I put with it? I don't want to use mayo because I think it will be too salty for the little one - and am not sure if they can have mayo under 1?? But just plain it would be vile. Lemon juice? too sour? Help.

PS - the reason I've gone for tins rather than fresh is because it requires less preparation from me - and I can't even touch fish without coming out in hives.

if you give your 10mth old egg, you can mix tuna with a bit of mashed potato, some chopped boiled egg, sprinkle with cheese and grill.

SSSandy - even ifyou are buying whole fish - you can ask them to fillet and/or take heads and tails and things off if you wish -

  • sauces - a light creamy cheese sauce can be great with a piece of white fish -
    or - if you do the tinfoil thing, pour some regular salad dressing ( french, Italian or whatever) over the whole thing and it "marinades" the fish really well
    If you flash-fry a bit of white fish, then, once you've removed the fish, add a bit of white wine to the leftover oil and reduce and then add some lemon juice, makes a nice sauce that will add a bit of flavour.

    JandJ - make a tomato-based pasta sauce, add the tuna and serve over pasta
    or tuna and pasta bake - tuna, white sauce and a green veg or sweetcorn(if you wish) all in a casserole, cover with breadcrumbs and bake -

JoshandJamie, heat a little olive oil and butter, add tuna and cook till mashed down (might need to add more butter). Add a bit of lemon juice and finely chopped parsley. Mix in with pasta.

Is it OK to give DS (8.5 months) sardines? Seen them in oil - and the tomato sauce ones - and the sodium level is quite low....

Thanks for those ideas everyone. I've actually made a tuna pasta bake before (long ago before DS2) and DS1 enjoyed it. But it's so hard because I can't taste it to see if it's ok.

I actually managed to create something using tuna today. I finely chopped a red pepper, a leek and a courgette and fried them in a little butter and some chinese five spice until soft. then mixed the veg with cooked rice and a tin of tuna and rolled them into balls. i added a bit of egg to try hold them together and put some breadcrumbs on the outside and gently fried them - and they were a hit. And I even managed to not come out in hives. Hooray!

Thanks for all the tips, salad dressing sounds good never thought of that one. Definitely doing some tinfoil variations on holiday. I've printed them out and they sound straight forward. Who knows? Might come back a demon fish cooker
