Opened on Sunday. Been in fridge. I want to stick it in a beef casserole. It isn't as pink as it was but smells OK.Any thoughts?!

Bacon is a long life, preserved product. That's the whole point of it. If the packet has been opened for a few days it's probably oxidised a little, hence the darker colour, but it's not going to kill you.
