A use for defrosted Icecream!!

Ice Cream muffins
I've put chocolate ice cream in the recipe to make chocolate muffins but you could substitute any flavour.
2 liters chocolate ice cream
3 1/2 cups self raising flour
1 teaspoon baking powder
24 servings 24 muffins Change size or US/metric
Change to: muffins US Metric
20 minutes 5 mins prep

1. Melt the ice cream.
   
2. Sift the flour and baking powder together into a bowl.
   
3. Add the ice cream to the flour.
   
4. Combine but don't overmix.
   
5. Spoon into muffin tins.
   
6. Bake in a moderate oven for 12-18 minutes (test one by inserting a skewer).
   
7. Leave in tins for 5 minutes then remove and cool.
   
8. Makes approx 2 dozen muffins.

tho' dh took over and threw all the icecream away in a manly fashion

but I will keep this cos it has happened to me before

have spent the night cooking all kinds of stuff with frozen things - blueberry jam, turkey balls, sardine pasta sauce (ewww)

As an aside, defrosted Green and Blacks choc ice cream makes a damn fine milkshake!!

Not sure I could bring myself to deed my DSs 2l of melted icecream all at once. Can you imagine the mess?

Mercy if I'd given them three pints of frozen icecream at 6 in the morning someone would have seen me through the window and posted a 'I saw my neighbour feeding her children defrosted icecream for breakfast' thread
