What is your never fails to be eaten rice recipe please?

I want to cut down on the amount of meat we eat and up the grains we have. I make rice with fish and veg, rice with veg only and used to make risi e bisi (makes note to make again) and would really appreciate some ideas from you for something I can make for my children, DH and I to eat (and if it can stay warm for 1-2 hours before DH and I are ready to eat that would be a huge bonus too but not essential.)

Rice is the only thing all my kids will eat. 2 will eat pasta and cous cous. One will eat rice but not pasta (unless spag bol) and one will eat cous cous if they have too.

Kedgeree is quite popular.
Egg fried rice with chopped spring onion goes down well.

Kedegeree is a brilliant idea, thank you.

Haven't ever used a packet with my kids so expect their noses to be turned up. Own stupid fault for always cooking from scratch so that sometimes they won't eat a bought version. Will definitely look at the sachets though and give them a go.

I have a lovely paella recipe with chicken and prawns, also a lovely chicken pilaf.

Obviously, both of these contain meat, but its not the main part of the dish. If they are the kind of thing you're looking for, I'll type out the recipes.

The best one is the bbc good food recipe.mjust be sure to cover it tightly so that it cooks. You could always add the chilli after the DCs portions have been removed.

Oooh, I just remembered about sticky Thai rice cakes and satay sauce.

Boil the rice. Stir through chopped coriander and spring onions. Using oiled hands shape into balls.place on a oiled baking sheet and cook in the oven while you make satay sauce.

here is the Guardian egg fried rice recipe, which is delicious. I serve with greens of some kind, or stir fry veg, and some crispy fried tofu.

Also, jollof rice:
Brown some chicken drumsticks on a medium to high heat until almost cooked, remove and reserve.

Add to the same pan rice, a tblspn tomato puree, chopped toms (either liquidised fresh toms or tinned) and chicken stock (you need one and three quarter parts liquid to one part rice) and stir. Add the chicken, cover tightly and cook on a low heat until the rice is done.

This is good with a little chilli added, pref hot sauce rather than fresh. I use Ghanaian shito (yes, it is really called that) sauce but Tabasco or Encona hot sauce will do fine.

Risotto

Bacon, broad bean and mushroom
Mushroom and pea
Butternut squash

All risotto gets eaten in seconds

If you pop in fridge straight after cool you can reheat later ( I usually stand pan in sink with some water so cools quicker)

TBH I am not counting chicken as meat as it is a good protein and better than red meat so grateful for those recipes.

Salmon with egg fried rice is popular here.
Also risotto - chicken, smoked salmon, mushroom, asparagus or cheese and bacon
Chicken or veg stir fry with rice
My personal favourite rice dish is Fay Ripley's lemon chicken with thyme rice
Cheesy tomato rice with ham and peas is a quick easy one

Kedgeree here too, lots of hard-boiled egg and a bit of cream. Fried onions and chills on the side.

I am loving the sound of the cheese and bacon one and DS2 would love the smoked salmon one.

I have just remembered Mexican rice that they all love so will do that this week.

Mine love risotto, especially with butternut squash and it reheats well. You can also make arancini with the left overs.

Have you tried bulgar wheat? It's somewhere between pasta and rice and is lovely with mushrooms, peas and cheese.

Or orzo.

I love chickpeas cooked in tomato sauce with rice (veggie) but you could do meatballs in tomato sauce?

Nasi goreng is good too, just add what you fancy.

Another thought, rice and Mexican beans in wraps.

My dh likes beef mince and rice in wraps.

Another tip, I put the hot rice in moulds (ramekin or dariole) and turn out the make a mound, they love it!

Leek and mackerel risotto for lazy people

Fry leeks with garlic
Add rice and chopped chives and season
Add fish stock
Put in oven for half an hour
Take it out stir in 2 x drained tins of mackerel and a load of grated cheese

If I can be bothered I sometimes poach everyone an egg to go with it

Fried rice a la nessus!

Vital ingredient is the MAGGI cubes. Cook rice til 3/4 done and set aside. Chop onion and garlic and fry in a little oil, crumble 2 maggi cubes on top and mix well, add grated carrot, mixed veg out of freezer (yes, sue me :p) and then a dash of water. Let bubble for a couple of minutes then add rice, mix well and let it cook dry. Nom nom nom

  • if you are a pesce, add seafood of your choice after maggi cube and before veg phase.

  • if veggie and want some 'bite' - add paneer (fried off already) with rice

I haven't bought bulger wheat before but happy too. I have bought orzo once but can't remember if I gave it to the kids and if they like it. Are both cooked and used like rice?

Kids love mackerel on toast so definitely giving yours a go, SuperiorCat, thank you.

Delia Smith's Brown Rice and Spinach bake - even die-hard "I hate green stuff"-ers eat this:
Baked Spinach with brown rice and cheese

450g fresh spinach, washed and chopped or 225g frozen spinach, thawed
225ml brown rice
1 teaspn butter
1 tablespn oil
1 onion finely chopped
450ml hot water
110g grated Cheddar cheese
2 large eggs, beaten
2 tablespn chopped parsley
freshly grated nutmeg
salt and fresh black pepper

2 tablespns wholewheat crumbs
1 tablspn melted butter
a couple of pinches cayenne pepper

Serves 2 - 3

Preheat oven to Gas 4 180 C
Heat butter and oil in pan and soften onion. Stir in rice and stir to coat. Add hot water, stir once then simmer for 40 minutes,covered, until tender.
When cooked, cool then mix with cheese, stir in eggs and parsley and chopped spinach. Season well and add some grated nutmeg.
place in oiled pie dish; mix breadcrumbs, butter and cayenne and sprinkle over the top. Bake in oven 35 minutes.

Khosheri is good - a bit like kedgeree but with lentils and fried onions instead of fish, and spicy tomato sauce on the side.

Here's one recipe, but we use tinned tomatoes not fresh, and it's absolutely fine.

I cooked this last Monday with some leftover chicken - you don't need a lot and can add lots of different veg to it. It was, quite frankly, delicious and I can't wait to make it again tonight!
