Quick, your quickest, easist pudding recipe please?!

I have completely over stretched myself tomorrow and have friends round for dinner (old friends, very informal). I am doing nachos and enchiladas and have already made a lot of it (salsa, guacamole, enchilada sauce all done) - what pudding can I make that will take no time with 3 children aorund my feet (and don't suggest they help - they will just argue and the whole thing will take 10 times as long Grin)? I need to shop tomorrow so ingredients not a major problem.

Greek yoghurt topped with fruit compote (home made or from a jar, preferably plum, rhubarb or apricot) topped with crunchy granola - served in individual glasses.

Oh, and meant to say, my friend not a fresh cream girl so pavlova out!! Sorry.

Ruffello, sounds lovely but I often have that for breakfast at the weekend so might feel a bit odd after mexican food and a few glasses of wine!

Assuming it's prep time you're interested in, not cooking time, the following is brill (not least because you make it in the bowl you cook it in).

Chocolate puddle pud.

In a pyrex dish mix together 1 cup of flour (about 6 floz), 2 tsps baking powder, pinch of salt (optional: it's an old recipe), 3/4 cup of sugar, 2 tablesp cocoa powder. Stir in 1/2 a cup of milk and 2 tablesp sunflower oil.


Boil kettle. Sprinkle 1/4 cup of cocoa powder and 1 cup of brown sugar over the top. Then pour 1 1/4 cups of boiling water over the top (don't stir!).

In the oven at gas 4/ 350F (so about 175 C) for 45 minutes - you should end up with sponge pudding sitting in a puddle of chocolate sauce.

Serve with cream if you want the extra calories (I usually do :-) )

Trifle - buy Madeira cake, smother in jam, squash into dish and splash on booze. Add raspberries/similar fruit then top with ready made custard and whipped cream.

Or Eton mess, ready made meringue, soft fruit, cream, mush up and done.

Or some lovely vanilla ice cream served with espresso poured over

Make a crumble? Easy peasy, though I guess it might not quite go with mexican food. Banoffee pie is my failsafe easy pudding, but it does involve a large amount of fresh cream.

Or just get some fresh strawberries and icecream?

Always apple crumble in a hurry.. Foolproof.. I use a recipe from an old student cookbook and add cinnamon into the crumble topping mix

Banoffee is very quick.

Thank you everyone, that choc cake sounds lovely. But I might go for posh ice cream or gu key lime pie. Off to waitrose tomorrow so can push boat out! I love cooking but sometimes you have to admit defeat!

Chocolate mousse - 1 egg and 60g plain choc per person. Cointreau/brandy/whisky if required. Melt choc, mix into egg yolks, then fold in whisked egg whites, add alcohol if used.

Put into individual ramekins. If you want to be really posh, put some finely-grated orange zest on the top. Leave in fridge.

Nigella's no churn margarita ice cream is absolutely delicious! Takes 10 mins (max) to make and goes really well with Mexican food. Sorry can't link at the moment but it's on her website.

I always make ginger ice cream cake with Mexican food. But a Jamaica ginger cake and some vanilla ice cream.

-Line a glass bowl with cling film
-slice the ginger cake about 1cm thick
-spread a layer of ice cream
-continue layers then cover bottom with cling film and put in the freezer for an hour
-when ready to serve, turn out of bowl on to a plate and slice to serve!

It takes about 5 mins to make, if that, and looks good too!

I've OP'd ( over pavlovad) so crumble all the way....warm with decent vanilla ice cream ..yum .....but all these recipes sound great...

fresh fruit salad - fruit of your choice - juice mixture of pressed apple juice and maybe grape juice - make an hour or two ahead and leave to marinate at room temp. Yum with cream, icecream or on own.

I often don't bother. Get the best possible ripe fruit. And some good cheese, plus nice crackers Maybe buy a bit of high quality chocolate for people to have with their coffee. (Some decent vanilla ice cream always goes well with soft fruit e.g raspberries.)

Microwave chocolate pud: (serves 4)

100g butter/marg
100g caster sugar
75g SR flour
2tbsp cocoa
2 eggs
1-2tbsp milk
100g soft brown sugar
1/2 pint hot water

Cream butter & caster, add eggs, add flour, add milk - should be medium-soft consistency. Pour into microwave-able dish. (I use a Pyrex casserole dish)
Mix sb sugar & cocoa & stir in near-boiling water. Pour over sponge mix. Do not stir!
Pop in microwave until looking dry/sponge-like on top. It took 8 mins in my microwave.


I got the recipe from my MIL & used it for the first time last night. It went down v well! Smile
