Is there such a thing as a really good, nice, inspiring courgette recipe?

Because I've never come across one.

I bought loads of them yesterday because the market were selling them off cheap at the end of the day for a pound a bowl. Now I'm looking at all 20 of them really dubiously. What on earth can I cook with them?

I have made courgette frittata a few times. It's basically loads of grated courgettes bound with egg and cheese.

Courgette fritters, grated courgettes bound together with flour & egg.

Courgettes tart, grated, piled up onto puff pastry with some goats cheese or feta baked

Courgettes in filo pastry grated with goats cheese

Courgettes bread, like banana bread

If you grate them & put on/in pastry put them in a tea towel & wring them to reduce the amount of water they will release.

In Australia we like zucchini (as we call courgettes here) slice. Probably similar to the frittata mentioned above but I thought this was a particularly Australian thing. Google it - I think bestrecipes.com.au has a good version.

Sauteed onions, add diced chorizo, peas, sweetcorn or any left over veg, and then add a couple of bags of microwave rice and stir.

This is my no-fail, ever so simple recipe that I do every time I have courgettes (or marrows, works equally well).
Get a large bowl or courgettes, leave on the side in the kitchen for at least a week. Remove and place in compost bin.

Chocolate courgette cake from BBC Good Food website (sorry don't know how to do links!). Absolutely delish - very moist and keeps well - works on the same principle as carrot cake.

River Cottage Veg Everyday courgette spouffle is amazing - even dh who "hates" courgettes had to admit it's very good indeed.

Cream of courgette soup is always a hit.

Sweat a chopped onion for a few minutes, add a chopped clove of garlic and a pound or two of roughly chopped up courgettes, make sure garlic and onion do not go brown. No need to wait for the courgette to be cooked but add immediately a pint of vegetable stock. Simmer for 5-10 minutes (you want the courgettes cooked but not beige, still green). Leave to cool for a bit and blitz or put in blender. Add salt and pepper and a dash of cream.

Lovely thick creamy soup!

Slice lengthways, scoop out some of the flesh, fry up with some chopped peppers, onions, garlic, pancetta. Put back into the hollowed out lengths. Top with some grated cheese and bake in the oven for about 20 mins. Works with marrows too but I replace the pancetta with mince.

I would say soup too. Cut up, boil with veg stock. Blend then add cream, parmesan and fresh basil if you have it. Simple and delicious. You can freeze the base and then add the cream and cheese afterwards.

Courgette, sausage and goat cheese pasta:

Chop 4 mild Italian sausages into bite-sized pieces and sauté until lightly browned and cooked. Chop one clove garlic and grate 2 small/medium courgettes. Add to sausages and cook over low-medium heat until soft. Add 1 tsp fresh thyme leaves, then stir in zest and juice of one lemon. Meanwhile, boil salted water and add pasta for four (rotini is good) and, when done, reserving a cup of pasta water, add sausage mixture to pasta. Break 125g of soft goats cheese over pasta and stir in, adding extra pasta water if needed to combine. Serve with torn basil leaves over top.

I like slicing them in half lengthwise, put some fresh rosemary leaves on (just a few per half), dribble a little natural yoghurt over, then some bits of strong cheese (eg cheddar) and roast for 30 - 40 mins until the cheese is browned and the courgettes are cooked through. I can just eat this for supper quite happily.

I always find courgettes make everything so soggy and watery but this is one recipe that doesn't - I have made a huge batch of these courgette and halloumi burgers and frozen them. They really are very good.
