I have either a deep fat fryer or oven available.....Need instructions! Mine are always a bit limp

Just realised this is a photo thread... will try and snap tonight's offerings..
all done! they are lovely- still a bit soft but they got quite dark already and I didn't want to risk them becoming inedible.ok so where did I go wrong that they didn't float and how will I know in future to take them out if they wont float for me?
