my sil's mother make a corned beef pie to die for!

There are mashed potatoes, carrot and onions in it as well as the corned beef, if that helps. Nice to take on a picnic!

Was it like cottage pie, but with corned beef rather than mince? If so, we used to have this too. Was simply a layer of corned beef, a layer of fried onions, then a layer of mashed potatoes. Always used to serve it with peas.

Don't know why corned beef is corned, but guessing that the only thing which makes it bad for you is salt and fat content, as with most processed food. You can now get lean corned beef though, so fat not such an issue.

I remember my dad making something called 'Panakalty' (sp?) which was made in a frying pan in layers and included fried onions, corned beef and sliced (already bolied) potatoes on top. I think you put an upturned plate on it whilst cooking. Remember loving it too - and sliced corned beef from the butcher to have with a salad - I loved that. When exactly did corned beef become unfashionable? Or were there food poisoning scares with tinned stuff?

There was a few cases in the early eighties when some people died from botulism(I think?) from canned corned beef from Argentina. We learned about it in chef school but that was quite a while ago.

He says it was a pastry pie filled with onions corned beef cooked potato and topped with more pastry - gosh carb overload he remebers having it o n picnics and at home with gravy and more potatoes!
What seasonings do you think go good with corned beef as i dont think i can makr it without some herbs as it sounds bland.

My mum used to make it but didn't have a pastry bottom on hers, just the top.

It doesn't need herbs and seasonings - the onions will do it.

When I was looking for mushy pea recipes earlier someone was adding garlic to them, and apparently Nigella does a spicy version. Sometimes it's just better to stick to the original!
